Giovane in gamba Alberto Olivieri. Basi da fornaio, pasta madre e farine qualitative quali scelte ideologiche, trasforma negli anni la sua bottega, aperta nell'anonimo centro commerciale, in un locale polivalente, fortemente identitario. Pane e pizza, dolci e caffè: c'è un lungo bancone costantemente rifornito ed uno spazietto degustazione, spartano nei tone, dove accomodarsi. La pizza romana in pala (speck all'amarone, mortadella e pistacchi), la romana farcita (cotto e stracciatella) e la pizza al taglio basica. Ma anche focacce, pizzette ed altre variazioni. Pane comune e non. Sempre meglio con i lievitati da colazione. Ottima mano su panettoni, colombe ed affini. Vini e birre. Servizio gentile.
