VEGETARIAN - MINIMALIST We are in the home of the chef who was the first to introduce vegetarian and natural cuisine into the panorama of Italian fine dining. Behind the label of "vegetarian restaurant, with an 80% vegan and gluten-free menu, there is a philosopher: Pietro Leemann. His dishes bordering on the dreamlike are concrete evidence of the impetus and awareness achieved over the years.
