In the historic center of Suvereto, the room recalls the pleasantly traditional and warm atmosphere of a trattoria, but the kitchen - while not renouncing some classic Tuscan - is sometimes more creative and elaborate. Among the most successful dishes is "Ia reale familiare" (the real family): a tasty cut of beef with capers and anchovies.
The chef's commitment:
"We are part of a farm that owns a stone mill. We grow and process organic grains of the territory and - thanks to a study conducted in collaboration with the University of Florence - we create and unite more agricultural activities to promote the organic development of the territory to protect biodiversity. The flours are - then - used for bread-making, pastry-making and the realization of fresh pasta".
