If neurogastronomy affirms it, the Clandestino - chalet a few meters from the waves - is the empirical proof: listening to the sound of the sea amplifies the gustatory perception. Moreno Cedroni's annual thematic menu (at 95 euros) transports the concept of cooking as entertainment back to prehistory but increasingly futuristic. The parsnip, wrapped in seaweed and cuttlefish black bread dough, allusively becomes a fossil of mussels to be 'extracted' at the table and savored with moscioli mayonnaise and "acid powders. The metaphor remains there until the dessert (ice cream kefir, gin granita, red fruit mousse and Jerusalem artichoke crumbled shortcrust pastry) the shape follows the footprint on the earth of the first man who dedicated himself to farming. Hut lying on the beach, which in season turns into a bathing establishment, where seafood cuisine triumphs in the purest Marche tradition. The raw material is of a high standard and the proposal, which changes almost daily, is made up of express cooking, delicate combinations with vegetables and sparing use of fats. Not to be missed, among the various raw, cold and hot appetizers, are the raguse in porchetta with wild fennel and the moscioli (rare wild mussels that are fished in the summer on the opposite rocky coast) 'spianti', i.e. opened in a pan, over high heat with oil and lemon. First courses based on egg pasta and second courses of noble baked and grilled fish. Sufficient wine list. Friendly service by the owner. I'm counting on 45 euros, more, with shellfish.

RESTAURANT A house in the greenery of the Conero Park, with the terrace in the garden even more appreciated, hosts this restaurant which offers classic cuisine, with clear French influences, made up of fine ingredients such as caviar, Japanese Kobe beef, duck liver and raw seafood Adriatic. Four different tasting menus (sea or countryside for 50 euros; only raw fish for 85 euros and the seasonal white truffle for 125 euros) reduce spending. From the menu, dishes such as roasted scallops with pumpkin cream are chosen; lightly smoked goose ravioli with pistachio; roasted quail with potato fondant and black truffle. Nice cakes and cheeses.
