Gennaro Nash has been able to react very well to the challenges imposed by Covid, renovating his restaurant in the atmosphere and making full use of the outdoor space. Bijou continues to offer an extraordinary gastronomic experience at the foot of Montmartre: undoubtedly one of the best pizzas in the world, with the best quality ingredients and a very light and airy imposition. The blend of flours developed, wholemeal, semi-wholemeal and other cereals, and a perfect leavening process lead to discs of a particular lightness. Among the new pizzas on the menu we point out the version with cciatella or black angus and stracciatella or the excellent stracchino, figs and ham.

NEAPOLITAN PIZZA
Giuseppe Cutraro, originally from the Quartieri Spagnoli, has opened his own restaurant in fine style. He had already made a name for himself as a pizzaiolo for the group Big Mama. His restaurant in the twentieth arrondissement has a Neapolitan "canotto" style of pizza, with a particularly high and well dimpled crust. You can start with some arancini, while among the round pizzas we recommend the Norma with datterino, eggplant, smoked fior di latte and salted ricotta and Sulle spiagge di Nerano with cream of zucchini, fior di latte, zucchini flowers, provolone and mint. The wine list has room for improvement.
